‘The Drunken Forest’ reimagines the traditional Black Forest cake with grown-up flair. Layers of gluten-free flourless chocolate sponge, soaked in cherry liqueur and Lady Earl Grey tea, are crowned with Valrhona chocolate mousse and cream. Bold, aromatic and distinctly boozy, it remains beautifully balanced with chocolate and cherry.

The sponge is deep and tender, with subtle floral notes from Earl Grey and a burst of boozy cherry compote. Valrhona chocolate mousse adds velvety depth, while a whipped mascarpone veil lightens the finish. Every bite brings together chocolate, cherry, tea and spirits in a refined modern interpretation.
